Thanksgiving Leftover Bombs | Recipe

Do you have some spare Thanksgiving leftovers that need eating? Check out this method of turning your leftovers into a unique cupcake sized treat! Please note, this is not an exact recipe. Feel free to add you're own flare and flavor!
Mix some eggs and cheese together with mashed potatoes. I put two eggs in a large bowl worth of potatoes with some handfuls of cheese.
Use an ice cream scoop to scoop the mashed potato mixture into greased cupcake trays, make a little divot on top and top with your favorite Thanksgiving side dishes.
Bake on 375 degrees for about 40ish minutes. Top with cheese for the last 5 I did crank it up to 400 degrees towards the end to make the edges crisp) Let cool for about 15ish minutes then lift out of the trays with a spoon.
Bag up and freeze any extras for use between now and Christmas!
